Mixología de México: Cócteles Icónicos Returns

Join us as we welcome back the vibrant world of Mixología de México: Cócteles Icónicos. This episode is with our esteemed friend, Haba Flores, and the talented Jesús Arceo.

Together, they embark on a flavorful journey through the essence of Mexico, encapsulating the spirit of Bruna and the exquisite craftsmanship behind his signature Reposado Tepache cocktail.

Jesús mesmerizes us with his profound insights into the fusion of art and mixology at Bruna, which opened in 2016, where tradition seamlessly meets innovation. With finesse, he unveils the magic of introducing ancient Mexican fermented beverages to captivated audiences, igniting a passion for exploration and discovery within each guest.

Jesús presents his masterful tableside serve of Tepache made from pineapple rinds, cinnamon, clove, and piloncillo made new with a beautiful and inviting infusion technique. It’s an experience crafted to enlighten and delight, inviting guests on a sensory adventure through the heart of Mexican hospitality.

Introducing Mixología de México: Cócteles Icónicos

Recently, the Academia Patrón team traveled through the Mexican states of Jalisco and Michoacán in search of iconic drinks, traditional and modern. Along the way, we captured cocktails presented by their original creators, by inventive bartenders, by direct descendents, and by enthusiasts, all eager to share the stories behind the drinks in their own words, honoring where they came from and what they represent today.

The first leg of the Cócteles Icónicos journey brought the Academia team to several cantinas, or bars, in the central highlands of México. We traveled to the famous La Capilla — the oldest bar in Tequila and one of the World’s 50 Best Bars — and to local standards like Casona del Chato Bar Familiar in Atotonilco el Alto, the birthplace of PATRÓN Tequila, to meet the bartenders who create and serve these classic cocktails daily.

La Batanga and La Paloma at La Capilla

We traveled to La Capilla in Tequila with Haba Flores to meet Aarón, the grandson of La Batanga inventor Don Javier Delgado, to sample Batangas and Palomas. They’re made the same way they were decades ago, stirred with the long wooden-handled knife used to cut lime, onions, cilantro, and avocado. The knife imparts flavor, the secret to success. 

Cazuelita and Cantarito

Right on the boundary between the Mexican states of Jalisco and Michoacán sits famed Bar-Restaurant Típico Arroyo de Comala,” the birthplace of the Cazuelita: a cocktail that combines fresh citrus, tequila and grapefruit soda, served in a shallow clay dish.

Originally known as La Cazuela Voladora’ or, The Flying Cazuelita,” this refreshing drink was created by Don Antonio Barocio in the 1960s and is still served by his direct descendants today. Join Roberto Núñez as he travels to El Arroyo de Comala to meet Don Antonio’s granddaughter, Doña Ángeles, and talk with her about the history of this iconic Mexican cocktail.

Limita and Chatazo

The story of PATRÓN Tequila begins in the town of Atotonilco El Alto in Jalisco. A vibrant community-driven home to many Patrón employees, a resting place for those traveling further, and the birthplace of the Limita and Chatazo.

Follow Roberto through the bell tolling town square as he finds a moment to rest and experience the best cantina culture Mexico has to offer. In this episode Roberto grabs a snack and an ever-refreshing Limita at Fello’s Bar, before sitting with the creator of the Chatazo, 84-year-old Cantinero, El Chato.

This year, an illustrious cast of chefs and bartenders from across the US, in association with the James Beard Foundation and Tajín USA, made their way to Mexico to learn about all things chiles and PATRÓN Tequila.

The journey into the world of Mexican mixology included visits to world-renowned bars and restaurants, walking the chile fields of Tajín, and spending quality time at Hacienda PATRÓN where visitors experienced firsthand what it takes to produce Simply Perfect tequila, from harvest to cocktail.
